As we had mentioned previously in our post about protein we would like to piece together another vital aspect of a child’s diet-especially that of a pediatric cancer patient.
This week we will turn our focus to the importance of carbohydrates. Carbs are the bodies main source of fuel to accomplish even the littlest tasks. Now a days it seems as though carbs are effortless, but what you may not know is that there is a particular type of carbs that is most beneficial.
The most beneficial carbs stem from unprocessed or minimally processed: whole grains, vegetables, fruits and beans. Check out this Sunday’s awesome recipe to load your child up on energy filled carbs!

Casseroles are a great time saver, here is what you will need:
- Olive oil
- 1 pound pasta, such as farfalle, small shells, or elbows
- One 15-ounce container ricotta
- One 15-ounce can pumpkin puree
- 2 eggs
- ½ cup yogurt
- 2 teaspoons salt
- Freshly ground black pepper
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¾ cup pecans, roughly chopped
- ½ cup loosely packed fresh sage leaves, finely chopped
- 2 large garlic cloves, finely chopped
- ¾ cup grated Parmesan, divided
